VEGAN PB PUMPKIN TEAR BITES
I had a bit of a pit fall with this recipe. All I can say is thank God for Peanut Butter. It saves me every time. What was supposed to be cinnamon rolls turned out to be another form of "bites." Like for reals though. Nevertheless I hope ya'll enjoy this.
I like to think of it as a piece of my baking journey as I'm trying to my game in this realm. Let's see if I can do it.
- Two 2/3 of non dairy milk
- 2 Tsp. of chia seeds
- 2 packets of yeast
- large can of pumpkin puree
- 1/2 cup of warm water
- lemon juice
- 4 cups of GF flour
- 2 Tsp of baking soda
- Melted Peanut Butter
1. Mix the warm water, non-dairy milk, pumpkin puree, lemon juice and chia seeds.
2. Put mixture in a warm area for 10-15 min.
3. Mix the GF flour, baking soda, and cinnamon.
4. Make a hole in the center and pour the wet ingredients in.
5. Mix together and place in the oven at 350 F for 30-45 min.
This week I realized how much pumpkin I had. I was also craving pasta. Like more so than usual. Hence this recipe was born.
Initially, I bought way too much pasta for this. Like for reals. The universe was obviously telling me that pasta was the answer to all my problems hahaha. Yes the one food that seems to characterize my childhood.
Oh if only it was...then the world would learn that carbs DO NOT make you fat. Instead they energize you and make you feel whole again. If you have plant based ones that is.

- Two Cups of non-dairy milk
1. In a sauce pan, pour 2 Cups of non-dairy milk, pumpkin, and lemon.
2. Mix Together.
3. In another pot boil hot water and mix the pasta together.
4. Drain the pasta. Then mix the pasta and sauce together.
This week's recipe is inspired by the technology breakdown my USB had at the library this past weekend. I was finding sources for a writing assignment when I accidentally pressed a button I wasn't supposed t o and BOOM...all my hard work was gone.
For the next fifteen mintues I wandered about figuring out how and why this could possibly happen to me. Then I reminded myself of the things that mattered to me: family, friends, veganism, being an idiot (yes it's a priority), and cooking (duh?).
Then my mind thought of the one meal that solves my hunger problems: vegan pizza. Initially I was going to buy the dough from Trader Joe's but decided I was going to make it. I have the ingredients so...WHY NOT?
Honestly though, I ask for major challenges when I'm making new recipes.
I had never made vegan pizza. Let me correct that: it had never come out right.
Then I found Siracha Vegan's dough recipe and I was saved. I mean thank God for Pinterest. I don't know what I'd do without it.
It difficult finding a mixture that was both oil free , vegan, and fat free. That is why we have this thing called "creative solutions." That's right I put my substituting skills on a mission. And that mission turned out to be easier than expected.
Moral of this post? Not all days have to be bad. A day of losing data on my USB turned out to be a good thing because I realized that I actually can cook a vegan pizza. One that tastes good and is appeasing to almost everyone. Plus who know that Follow Your Heart cheese was AMAZING. I mean, I was missing out...big time.

Yes I even get that taco stuffing on. Like it's not even a joke. Initially I was going to make vegan tacos but you can pretty much put this with anything.
Yes it is a recipe that doesn't discriminate when it comes to dinner or lunch time.
The one ingredient that I forgot to put was some lemon and pepper. It'll add some more flavor to the stuffing. I also realized that one box of firm tofu wasn't enough. In fact I needed two.
So if any of you are planning to make this, buy two packs of tofu. And lemon. And pepper. Basically some of the things that I left out hahaha.
